Delicious Sooji halwa with milk is prepared with semolina, sugar, dry fruits and milk. It is the most easiest dessert recipe.
5-6 Kishmis (raisin),
10-12 cashwnuts (grated),
3 pods Cardamom or elachi (powdered),
5-6 Pistachio (pista badam) grated,
Saffron ( mix with 2 tbsp milk ),
1 bowl ghee,
1 bowl milk,
1 bowl sooji (semolina ),
1 bowl sugar,
3 bowls water,
* Sugar, milk, sooji and ghee must be measure from the same bowl in equal quantity.
1) Mix sooji and milk in a bowl to make a batter. Cover it and keep aside for half an hour.
2)Now prepare sugar syrup--mix 1 bowl of sugar with 3 bowls of water in a pan. Add cardamom powder into it. Heat the pan and stiring continuously till sugar dissolves completely.
3) Melt ghee in a pan in low flame. Add batter into the melted ghee slowly in low flame to avoid lumps. stir it continuously till the paste turns golden brown.
4) Mix sugar syrup into the paste and stir continuously in low flame. Add saffron to get the orange yellowish colour. Cook on low flame till mixture got thickened, stir the halwa continuously. If it is cooked perfectly then you can observe ghee around the surrounding of the halwa and one more thing the halwa won’t get stick to the pan.
Add cashewnuts, kishmish and pista. mix well.
Turn off the flame. Halwa is now ready to serve. Garnish it with dry fruits.
