Gajar Halwa ( Carrot Halwa )

It is a carrot-based sweet Indian dessert--very delicious to taste.


5-6 Carrots,
1 cup Milk,
1/2 cup khoya
3-4 Cloves,
3-4 Cardamom,
1/4th tsp Green cardamom powder,
2-3 tbsp Ghee,
3/4th cup Sugar,
1 tbsp Raisins,
1 tbsp Almonds, shredded,
1 tbsp cashew nuts (chopped),
1 tbsp pistachio nuts (grated)

Method to cook:

1) Wash, peel and grate the carrots.

2) Heat ghee in a pan. Add cloves, cardamom and cinnamon. Add grated carrots in hot ghee and saute. Cook it for 5 minutes using a lid in a low flame so that it can't be burnt.

3) Add milk slowly into the pan and mix it well with the grated carrots. Cover it with a lid and cook for 5 minutes.

4) Add sugar. Mix well and continue cooking until the halwa turns deep reddish color. Then add green cardamom powder, khoya, raisins, cashewnuts and pistachio nuts. Mix well. Cook for 2/3 minutes.
Now yummy gajar halwa is ready to serve. Garnish it with dry fruits.
