Chickpeas with spinach ( Palak chole )

Though you are a diabetic patient, if you know the basics of meal planning, you can make almost any recipe work for you. One such recipe is Chickpeas with Spinach.


1 cup chickpea ( kabli chana ),
spinach leaves ( chopped )
1 tbsp olive oil,
2 tsp chopped garlic,
2 tsp chopped green chilies,
1/2 cup chopped tomatoes,
2 tsp chopped ginger,
2 tbsp lemon juice,
1/2 spoon cinamon powder,
1 tsp coriander powder,


Soak chickpeas overnite. Add 2-3 cups of water and salt and put it in a pressure cooker for 2-3 whistles and keep aside to cool. Boiled spinach in little water for 2-3 minutes. Then blend it in a mixture for a fine paste.
Heat olive oil in a non-stick pan. Add garlic and green chillies. Fry it till golden brown. Add ginger and mix it well. Add tomatoes. Cook it well.
Add the boiled chickpeas and cook for 3 minutes. Now add spinach paste, lemon juice, coriander and cinamon powder. Stir well and cook till water dries up.
Now its ready to serve. Serve it hot with chapati,paratha, puri, bread.
