Chicken Rezala was once a favorite of the Nawabs of the Mughals. Now it has gained popularity all over the world. Let's teach you how to make this 'Nababi Khana'
1)For marinate: ginger paste, garlic paste, curd, white oil
2)For cooking: 3/4 tablespoon ghee,
2 bay leaves,
2/3 cloves and cardamon,
white and black pepper,
3/4 red chillies,
1 cup onion paste,
2/3 chopped green chilli,
poppy seed paste,
cashew nuts paste,
1 cup curd,
salt and sugar,
half a tablespoon kewra water,
safforn mixed with 2 teaspoons of milk
First, marinate the chicken with garlic paste, ginger paste,little curd and white oil and keep it aside for 2 to 3 hours. Add ghee to the pan. When the ghee is hot, add bay leaves, cinnamon, white and black pepper, cardamom, cloves, red chilli. When it is ready to cook a good smell come, then mix onion paste in it.Stir it well. Mix chopped green chilli, kaju & poppy seed paste in it. stir well. Pour marinated chicken into the pan. Add some water and cover it so that the chicken is boiled quickly. When it is completely boiled, the oil will float on the gravy.
After 10/15 minutes, when the chicken is boiled, open the lid and add grated onion. Add salt. again cover it with lid for 5 minutes. When it is ready, add two drops of aatar(not much otherwise it will be bitter), half spoon kewra water and saffron mix with water.
Now delicious Chicken Rezala is ready to serve.
